The importance of good carbon steel is that it is able to brought to a very sharp edge, and able to retain this edge for longer. The more steel that is used in the product, the harder it is.
The reason we need a good sharp edge, is that when we cut a branch or trunk, we want a clean cut. If the tool is blunt, it will "crush" rather than cut. This creates 2 problems, 1. You are more likely to do more damage to the branch, sometimes creating "die-back" down the branch, often loosing buds that you need to develop, and 2. a ragged edge will create a greater opportunity for infection and disease to enter your tree.
